How to Make a Cheesecake

It amazes me how often I hear that people are still intimidated by the thought of baking a cheesecake from scratch. Perhaps, the baking shows we watch on TV give the impression that baking cheesecake takes great skill or culinary training, but that is just not so. You'd be surprised how many settle for buying cheesecake or making the simpler No Bake Cheesecake Recipes just to avoid what they think is an arduous job otherwise. I may surprise you to know that baking a cheesecake that looks as yummy as it tastes requires less skill than you may think. I'm going to show you just how easy it can be. If you can follow my directions and you can read a recipe, then you have all the skill you need to make a sinfully scrumptious cheesecake as good as the best of them!

Top 5 Tips for Making a Perfect Cheesecake:

1) One secret most don't know is that buying only quality ingredients for your cheesecake makes all the difference in the world. So I don't recommend substituting the cheaper generic brands of ingredients such as cream cheese. Only buy brand name products when baking a cheesecake, the results far outweigh those of lesser brands. Another tip that's important to mention is to follow your recipes exactly. For instance, if the recipe your using calls for "sweet" condensed milk, you should only use that type of milk and not try to substitute regular or plain condensed milk because your cheesecake will not turn out right. The sweetened type of condensed milk adds moisture and sweetness others don't, and certain recipes specifically call for that type. Always do exactly as your recipe calls for for the best results, you'll be glad you did.

2) The 2nd tip I'd like to share with you is to remember to take the cream cheese out of the refrigerator ahead of time to allow it to soften to room temperature. Trying to mix cold cream cheese is not an easy task at all. For a creamier cheesecake it is best to allow all the ingredients to get to room temperature first, but no longer than an hour prior to use.

3) Unwrap the cream cheese and cut into small pieces before putting it into the bowl. Smaller portions will make mixing the cream cheese much easier and will give you a creamier texture.

4) When mixing, never set you mixer to anything higher than medium as over mixing can cause your cheesecake to be rather tough. Use your best judgment when mixing the ingredients.  Your goal is mixing just enough to ensure all ingredients are blended  and remember to frequently scrape the sides and the bottom of the mixing bowl to ensure that you have everything complete blended all the way through. You don't want to be in the middle of pouring the cheesecake batter only to notice that there is unblended cream cheese on the bottom of the bowl.

5) The last, and probably one of the most important tips is that you should refrain from opening the oven door until the cheesecake is done. Opening the door lowers the temperature that is vital to how your cheesecake turns out, so if you must open the door, make it quick. Also, when you first pre-heat your oven, place a good size pan of water on the bottom rack of your oven. it must be large enough to ensure enough water for the entire baking period. This water creates the necessary moisture that will help your cheesecake not to crack on top. Don't panic if it does crack, they are easily covered with cherries or whipped cream as a topping. Fruit and cream are also great cover ups for any over browning on top as well.
